Tuna Salad Lettuce Wraps

Stephen and I made these this weekend, they were delicious and savory. We didn't even miss the mayo and bread that typically comes with a tuna sandwich. This is a perfect lunch or a quick and simple dinner if you are in a rush!
2 cans of tuna in water, drained
1 cup carrots, chopped
1/4 cup sugar snap peas, chopped
1/4 cup cabbage, chopped
4 celery stalks, chopped
1 tablespoon spicy brown mustard (make sure no sugar)
2 tablespoons dijon mustard (no sugar)
salt and pepper
2 tablespoons sweet pickle relish
1 tablespoon chopped capers
Romaine lettuce spears- or you can use butter lettuce



Directions: 
  • Chop all your ingredients (Stephen did a pretty awesome job chopping, don't you think?!)
  • Mix all of the ingredients together in a small bowl. Taste and add extra mustard if you would like it a tad creamier. Also add salt and pepper to taste. 
  • Fill your lettuce spears with the mix (Stephen had also spread a little hummus on the bottom and put some avocado on top, was pretty amazing!)

Chicken Salad

For the past several weeks I have been eating salads... pretty much exclusively, and I was burnt out! I wanted to prep something new on Sunday that would give me a few meals during the week. I really liked the chicken salad I came up with! The cilantro in the salad gives it a great freshness that typical mayo salads lack. Try it out! I served mine up as lettuce wraps, using delicious butter lettuce!! Stephen still doesn't understand why grapes are in the salad, and I think it freaked him out a little, but he had to admit that it tasted really good.

1 rotisserie chicken, shredded or cubed
1 1/2 cups grapes, sliced in half
1 teaspoon salt and pepper
1/2 cup cilantro, chopped
1/4 teaspoon garlic powder
2 stalks celery, chopped
3 green onions, chopped
2 tablespoons mayonnaise 
2 tablespoons sour cream
1/4 teaspoon red pepper flakes (optional)


Directions:
  • Shred the chicken and put in a large bowl
  • Add all the other ingredients and mix 
  • Serve up in a lettuce wrap, on some bread or in a tortilla (or Stephen just eats with some chips!)

Anytime Sandwich!

I call this sandwich an "anytime sandwich" because it is delicious for any meal. The first time I had this sandwich was at a coffee shop and I had it for breakfast so of course I re-created it for Stephen and I for lunch a couple days later. It is SO simple and just surprisingly delicious!

Cream Cheese
Bagel
tomato
cucumber
sprouts or arugula
avocado
salt and pepper
garlic powder



Directions:
  • Slightly toast the bagel of your choice
  • Spread with a generous amount of cream cheese and sprinkle lightly with salt, pepper and garlic powder
  • peel the cucumber and cut into very thin slices
  • Then layer the sliced avocado, cucumber, tomatoes and sprouts on the bagel and cut in half
  • devour!

Chicken Salad

I have probably made this one before- but just wanted to use up some of our lettuce last night. Decided to use a rotisserie chicken I bought over the weekend and make a delicious chicken salad! I wanted to try a new dressing so I found this sesame ginger at the store. With the ingredients I used for the salad, it seems a little funny, but this dressing is SO good with this salad!

2 cups arugula 
1 cup spinach
1 cup mixed greens
1 can red beans, drained and rinsed
1 can corn, drained and rinsed
1 package mushrooms, sliced
3 carrots, chopped
4 green onions, chopped
1 can olives, drained
1 cup rotisserie chicken, chopped
1 red pepper, chopped
Sesame ginger dressing

Cleanse Day 1 - Lunch

Tomorrow marks the start of my cleanse! I will actually be attempting to do it as long as I can, but for the purposes of this blog- its actually a 21 day cleanse that Stephen and I will for sure be adhering to for 30 days. One thing that can be hard when doing a cleanse like this is packing a lunch for work. My go-to meal will be a veggie sandwich. Its filling and satisfying so I am not thinking of food the whole day. Here is what goes inside!

Brown Rice bread
Soy Mayo - it is eggless 
micro-greens (or sprouts)
spinach
tomato
shredded carrots
red pepper 
avocado
Salt and pepper

Reuben Sammy

I look forward to Corn beef and Cabbage month all year long, and thanks to my marvelous mom, I get to make delicious Reuben sandwiches!  This one of my favorite sandwiches, Stephen and I could eat a ton of these!

Corn Beef, boiled with pickling spice
Sauerkraut
Thousand Island dressing (good kind)
Rye bread
Swiss cheese



Directions:
  • Warm your corn beef if it is not already and also slightly warm the sauerkraut. 
  • Toast the rye bread and then put a thin coat of Thousand Island dressing on each slice.
  • Layer the Swiss cheese down, then corn beef then sauerkraut
  • Serve up!!
